Usually when a dog suffers from heat stroke, you will see panting, unable to stand up (if severe), lack of response, difficulty breathing, vomiting, diarrhea and a temperature of about 103-106 and more. It becomes a emeregency very, very quickly. IV fluids are usually needed, and supportive care of a veterinarian.

A check of good relationship with your pet is to watch the white eyes. When they are well hydrated and not under much stress whites are very white. As heat stroke or sets in the effort, the white becomes pink or red. If your dog was in heat and / or has, it is easy to control, to see if you need to do a lot with cooling hydration. Always ensure that their nose is fresh and moist and the pads of their feet do not feel like they are running a temp.

My vet told me that they can be among the first signs of overwork and take immediate action before more serious symptoms appear, such as those mentioned by other responders to your question. I use these simple quick checks when my dog is a long distance walking / short, when we train and agility when he has himself been exercising for long periods and to adapt their work and attention on maintaining a cool and hydrated if the whites of his eyes begin to show signs of stress.
